Chicken Fricasee

Serves 4-6.
Although chicken fricasee recipes have been adopted by many countries around the world, it remains a favorite in Cuba. Once you’ve mastered the basic recipe, it’s easy to add more or less.

1 tsp. olive oil
1 large onion, chopped
4-5 garlic cloves, chopped
One green pepper, chopped
Pinch of saffron
1 ½ tsp. dried oregano
1½ tsp. dried basil
½ tsp. paprika
1 bay leaf
3 chicken breasts, split
½ tsp. salt
½ tsp. pepper
¾ cup chopped raisins
½ cup green olives, stuffed with red pepper
One can tomato sauce
Two medium potatoes, thinly sliced
1 cup frozen peas
One small jar roasted pimento
¼ cup dry white wine

Sauté first four ingredients until onions are wilted. Add next five ingredients and cook for 2-3 minutes. Add chicken, salt and pepper and cook for another 2-3 minutes.

Add raisins, olives, tomato sauce and wine. Bring to a boil. Add potatoes, cover and simmer until potatoes are cooked, about 15-20 minutes. Add peas and pimento, then cook for another 2 minutes and serve over white rice.
