Fingerling Potato Cups with Crème Fraíche and Caviar

20 Fingerling potatoes
1/4 cup crème fraîche
1 ounce caviar, black
half bunch chives, snipped
Salt and pepper, to taste


Preheat oven to 350 degrees Fahrenheit.

Cut fingerling potatoes into 3/4-inch wheels. Using a small melon baller, make a small round scoop on one side of flat edge (preferably the wider edge).

Toss potatoes in olive oil, and bake potato cups upside down until golden brown.
