Habanero-Infused Watermelon “Gazpacho”

Habanero-Infused Watermelon “Gazpacho”

Ingredients:
1 medium shallot (minced)
1 half habanero pepper (stem and seeds removed)
1 tablespoon minced cucumber (skin and seeds removed)
2 pounds watermelon (diced small)
2 ounces champagne vinegar
4 sprigs cilantro (leaves only, finely chopped)
1 avocado (diced small)
Sea salt

Preparation:
In a small sauce pot, add shallot, habanero, cucumber and watermelon. Simmer on low heat for 10 minutes. Let cool, then mix in vinegar and cilantro. Remove and discard habanero. Refrigerate before serving. Garnish with diced avocado and sea salt.
